Chicken Sambal...

Okey, here's my style of cooking Chicken Sambal...hehehe...;)

Ingredients :-
  • 1 whole chicken - cut into medium pieces
  • 3 tbsb soya sauce
  • 4 sb cornflour
  • *10 shallots
  • *6 cloves garlic
  • *1 inch ginger
  • *2 stalks of lemongrass
  • *2 candlenuts
  • *1 inch turmeric
  • *20-25 dried chillies (boiled)
  • little thick coconut milk ( make the sambal thicker)
  • 1 dried tamarind slice (optional...add if u use coconut milk)
  • 1 cinnamon stick
  • 1 star anise
  • salt to taste
  • cooking oil
Preparation :-
  1. First of all, marinate chicken with soya sauce and cornflour for 20minutes....
  2. Blend smooth all ingredients marked *....
  3. Heat oil in wok, deep fry the marinated chicken till golden brown...keep aside.
  4. Reduce the oil, add cinnamon stick and star anise...stir till fragrant.
  5. Add in blended ingredients and stir fry till oil floats...
  6. Add coconut milk and tamarind slice...stir and leave it to boil.
  7. Put in the fried chicken and mix together. Add appropriate salt to taste. Mix well and turn off the flame.
  8. That's it....ready to serve! Goes well with Nasi Lemak (Coconut Rice) !
  9. ***This sambal is thick in gravy...u may add little water according to ur preference...
