Sausage Stir-fry...with Eggs & Dried Shrimps!

This is the kind of dish I would cook whenever I'm feeling down and mood less. It's quick, easy and goes well  with plain rice, bread or just like that! SAUSAGE STIR-FRY WITH EGGS & DRIED SHRIMPS Ingredients :~ 1 pack chicken sausages, about 340gm 5 cloves garlic ~ minced 1 large onion ~ sliced 2 green chillies ~ sliced 1 tbsp dried shrimps ~ soaked in water for 5 minutes, coarsely pounded 3 eggs  2/3 tbsp chilli powder 1/4 tsp coarse blackpepper salt Method :~ Cut sausages into 1 inch length slant-wise.  Heat oil in a wok and stir fry garlic, onion, dried shrimps and green chillies for 1 minute. Add sausages and cook until they turn slightly darker.  Add chilli powder, blackpepper and salt. Mix thoroughly. Make a well in the center and break in the eggs. Mix the eggs a little and cover with the sausages. Cook over low heat. Now, scramble up everything together. Add salt if needed. Your Sausage Stir-Fry is ready! * Reduce the amount of chi

Fish Sambal / Sambal Ikan...

A simple Fish Sambal recipe from my kitchen to you.... :) I was looking high and low for threadfin ( senangin )...unfortunately I didn't find them! And got myself some fresh mackerels. Initial plan is to just fry the mackerels but my younger sister requested for sambal, infact she said she'll eat anything made of fish! I teased her to eat it raw and she was willing to, if I pay her RM100...lol she might do it! I stepped back... :D Realised I've not cooked fish sambal for some time...so might as well cook it. The spiciness was just right because my kids need to eat the same. Everyone enjoyed the dish, so do myself! The fish was indeed very fresh. I had to do a quick photoshoot as there were few tummies already waiting for me! You may try out this sambal with any fishes of your choice. Nutty Chocolate Fudge in Cuppies..

Seeing you all again on a beautiful Friday... Are you a chocoholic? Me not, but cannot resist on chocolates whenever I see my kids. They can make anyone chocoholics....serious! Not forgetting the main sweet tooth in our family, yes My Hubby! Like Papa, like son and daughter :) Made these fudges yesterday simply because I wanted to keep myself busy, lol! Actually I wanted to finish off the cashew nuts I had in stock. Chocolate fudge, usually made in bars. I prepared in cuppies, thus the title!  Come closer, check out the recipe and pictures...;) NUTTY CHOCOLATE FUDGE CUPPIES Ingredients :~ 200gm dark chocolate about 55% cocoa ~ chopped 30gm salted butter ~ chopped 150gm sweetened condensed milk 1/2 tsp vanilla essence or any flavour of your choice ( mint or orange ) 80gm chopped nuts ~ I added cashews Method :~ In a saucepan, add dark chocolate, butter and sweetened condensed milk. Nutella Cashew Brownies & GA Goodie Boxes!

Before I move on with my recipe today, let me thank each and every of you for commenting on my latest header. It's really nice to read compliments every time I sign in...haha!  Our treat over the weekend, brownies and guava juice. My kids enjoyed the evening..why not, it has their favourite Nutella in it. They remained silent and gave their verdict only after the last spoon. Owh, I was truly fascinated but didn't plan to interrupt by clicking their joyful acts. Was admiring them as they indulged into their brownie world...lol! Me       : Rishie, so how is the brownie, do you like it? Rishie  : Very tasty Ma! I like..(pointing his thumbs up). Me       : Ashika, what about you, you liked the brownie? Ashika : Ashika want somemore!!! And, like I said before...I prefer brownies more than cakes. For a twist, I bake them in individual ramekins...bored of having squared brownies. These would have been perfect with a scoop of vanilla ice cream...yumm! NUTELLA CASHEW BROWN

Stir-Fried Minced Chicken & Eggs

STIR-FRIED MINCED CHICKEN & EGGS Ingredients :~ 400gm minced chicken ~ I used Ramly 3 eggs ~ beaten  1 tbsp garlic paste 1/2 tbsp ginger paste 2 green chillies ~ sliced 1 large onion ~ thinly sliced 1 inch cinnamon stick 1/4 tsp fennel seeds 1 tbsp chilli powder 1 tbsp meat curry powder 1 sprig curry leaves salt oil Method :~ Heat oil in a wok. Saute cinnamon stick and fennel seeds. Stir fry the garlic & ginger paste and add onions, green chillies and curry leaves. Add minced chicken. Mix together and cover the lid for 2 minutes until the chicken is cooked and the raw smell leaves. Add chilli powder, curry powder and salt. Stir and cook for another 3 minutes. Make a well in center and pour in the beaten egg. Mix them evenly and allow to cook for another 3 minutes. Keep stirring. Add salt if needed. Serve immediately :) Note :  You may substitute the eggs with cubed potatoes. Be sure to fry the potatoes in oil before adding to the chicken. This dish

Stir-Fried Spinach with Garlic

Welcome friends! I guess this vegetable dish needs no introduction as I'm sure everyone knows how to cook it! Let's see how I prepared it, the simplest way of mine!     STIR-FRIED SPINACH WITH GARLIC Ingredients :~ 2 bundles of spinach ~ rinsed and chop off the lower stem part 8 cloves garlic ~ minced 3 shallots ~ thinly sliced 5-7 pcs bird's eye chillies (cili padi) ~ thinly sliced 1 tbsp oyster sauce salt 2 tbsp oil Method :~ In a pan, heat olive oil and saute garlic for 2 seconds, followed by shallots and chillies. Stir until fragrant. Add spinach, oyster sauce and salt. Mix and cook for few minutes. Dish out!  * For variation, you may add fried anchovies / dried shrimps to this dish. Isn't it too simple? :)  

Crispy Chicken Fillets, my recipe from SAJI :)

This is the chicken recipe I shared in a local food magazine, SAJI in the month of June' 2012. I'm now sharing it here :) CRISPY CHICKEN FILLETS Ingredients :~ Marinade 700gm chicken fillets (breast part) 4 cloves garlic ~ minced 1 inch ginger ~ minced 2 tbsp pure honey 250ml buttermilk or yoghurt 1 tsp dried rosemary 2 tsp cajun / paprika powder ½ tsp coarse blackpepper salt to taste Other ingredients 5 cups original corn flakes ~ crushed ½ tsp coarse blackpepper little salt Ziplock plastic bag oil for frying fresh salads for serving Thai Chilli sauce for serving Method :~ In a large bowl, mix the marinade ingredients and chill in refrigerator for 2 hours or longer.  Using a ziplock plastic bag, add in the crushed corn flakes, coarse blackpepper and salt. Give it a shake.  Now, place few pieces of the marinated chicken fillets into the bag. Zip it and shake thoroughly.  Meanwhile, heat oil in a pan. Deep fry the chicken

Satay Party & A Fun Gathering with....

Hello friends, it's going to be a loooooong post with loads of photos today! We threw a Satay Party for a special group from Malaysia Marine Club last Saturday night. I'm sure you are aware that my Husband is keeping a 7 foot marine aquarium in our home. I've posted some pics of his tank and the inhabitants some time back. If you've not read about it, do check it out HERE . Husband, who is a member of the club welcomed the whole group to our home. These guys, the reef fanatics had always shared their stories and experiences at the club forum. This was the first time they met my Husband and his tank in person. I tell you, they are all so friendly and I truly felt the 1Malaysia spirit! And they are definitely reef fanatics as I said. Their willingness to share and gain knowledge in marine tank impressed me...:) I managed to get some shots of them that night. Sorry my pictures are not so good as they are all taken under low light and I'm no expert in that (okay
