Homemade Chicken Rice...(recipes updated)


The chicken was fried too much as I was busy playing with Ashika, forgetting the chicken in wok!

This is a Chinese Style Chicken Rice...

The Rice and it's set...

Ingredients :~
- 4 cups rice (preferred fragrant rice, beras biasa pun okey!)
- 2" ginger ~ pounded
- 5 cloves of garlic ~ pounded
- salt to taste
- sufficient water ~ adjust to the rice, Love use 6 cups ( take the water from the boiled chicken)
- corriander leaves ~ chopped
- spring onions ~ chopped
- 2 screwpine leaves ~ knotted (optional)
Methods :~
Chilli garlic sauce...- Wash rice and drain the excessive water.
- Add 6 cups of water from the boiled chicken, salt, ginger, garlic, corriander leaves, spring onions and screwpine leaves.
- Cook in a rice cooker like normal.
- That's all...ready to serve.

Ingredients :~
- 10 red chilies
- 1" ginger
- 4 cloves of garlic
- 1 tbsp lime juice
- a pinch of salt
- pinch of sugar
- 3 tbsp of chicken broth (water from the boiled chicken)
- Blend together all ingredients above till smooth. Adjust the taste as u desire.
- That's all, ready to serve.
The boiled n fried chicken...( crispier version )...


Ingredients :~
(A) To boil
- 1 whole chicken
- 2" ginger ~ crushed
- 5 cloves of garlic ~ crushed
- 1 tsp salt
- 1 tbsp sesame oil
- few spring onions ~ chopped
- sufficient amount of water (make sure the water is more and it covers the whole chicken...this water will be used for rice n sauce as well)
- 2 tbsp garlic n ginger paste
- 3 tbsp of thick soy sauce
- 1 tbsp of oyster sauce
- 1 tbsp light soy sauce
- 2 tbsp BBQ sauce
- 1 tsp of sesame oil
- salt to taste
- cooking oil
- Put all ingredients (A) in a big pot. Bring them to boil for about 10-15 minutes.
- Take out the chicken n leave it to dry. Keep the boiled water (for rice and sauce).
- Next, mix the chicken with ingredients (B), except cooking oil and leave it aside for 1 hour.
- Deep-fry the chicken in oil. (Don't fry for too long
)
- Take out the chicken, drain excessive oil. Leave the chicken to cool b4 cutting as u wish.
Sesame sauce ( few dashes on the rice and chicken b4 serving )...

Ingredients :-
- 3 tbsp sesame oil
- 1 tbsp cooking oil
- 5 shallots ~ thinly sliced
- few spring onions ~ chopped
- 8 tbsp light soy sauce
- 1/2 cups of water ~ adjust accordingly to ur preference
- a pinch of salt
- Mix light soy sauce, water and salt in a bowl. (U may add more water if it's too salty)
- Heat cooking oil and sesame oil in pan. Stir-fry sliced shallots till fragrant, add spring onions. Turn off flame. (Don't fry the shallots for too long)
- Pour the shallots, spring onions together with the oil into the prepared soy sauce bowl.
- Mix together. Ready to serve!
The chicken again...not forgetting those cucumbers....


Ginger Sauce (I never do this, but it can really be a great companion for the Chicken Rice)
Ingredients :~
- 80gm of ginger
- 7 cloves of garlic
- a pinch of salt
- 1 tsp lime juice
- 2 tbsp of chicken broth (water from the boiled chicken)
- Blend all ingredients above till smooth. Adjust the taste accordingly.
- Ready to be served.
The Chicken Rice is often served with Sliced cucumbers, Thick soy sauce and Soup as well.
psst..> Items not in the set ~ Soup, thick soy sauce and ginger sauce for dipping...(Love don't like soups)..


I just want to have the recipe of that sesame sauce. I don't have that in my chicken rice, LOVE.
