♥...Special Chicken Curry with Love...♥

Good Monday Friends!!! How U all been??? Wish U had a great weekend!

Okey, as U all know about my love for chicken dishes...here's a newly created Chicken Curry recipe from love2cook. I love experimenting my curries with additional spices and ingredients all the time. This one resulted not bad at all as my family just loved it! senyum

I've posted few styles here before, and adding to the list would be Special Chicken Curry with Love. Why such a title for the dish??? Not sure why though...simply named it...hahahaha!!! sengihnampakgigi

Ingredients :~

1 whole chicken ~ cleaned and cut into smaller pieces

blend together
5 shallots *
3 garlic cloves *
1 inch ginger *
2 lemongrass stalks *
1/2 inch galangal *

make a paste with some water
2 tbsp meat curry powder
1 tbsp chilli powder
1/2 tsp turmeric powder
1/4 tsp fennel powder
1/4 tsp cumin powder
1/2 tsp corriander powder
1 cinnamon stick
1 star anise
3 cardamom pods
1/4 tsp fennel seeds
1/4 tsp cumin seeds
1 large onion ~ sliced
2 green chillies ~ sliced
1 sprig curry leaves
1 screwpine/pandan ~ knotted
2 large potatoes ~ cut each into 4 or 6
1 large tomato ~ cut into 4
2 dried bay leaves
1 chicken stock cube
100ml evaporated milk
sufficient water
salt to taste
cooking oil/ ghee

Method :~
  1. Heat oil in wok. Saute cinnamon stick, star anise, cardamom pods, fennel and cumin seeds until fragrant. Add in sliced onion, green chillies, curry leaves, screwpine.Stir awhile.
  2. Now, add the blended ingredients and stir. Put the chicken pieces in, mix together and let it cook with the lid covered for 3 minutes.
  3. Open the lid and add the mixed paste. Stir together until the chicken is well-coated with the spices. Cover the lid again for another 2 minutes.
  4. Add water, potatoes, tomatoes, chicken stock cube, bay leaves and salt. Cover with lid and let it boil for 5 minutes or until the potatoes cooked.
  5. Finally, add evaporated milk. Give it a boil and turn off the flame. Dish out.
I cooked the curry with lid covered most of the time. This will make the curry really aromatic. kenyit
