♥...Crumbed Boxing Chicken...♥

Okey, I'm back again with my most favourite...Chicken of course! U knew I've got a soft corner for fried chickens right. Thus, I bookmarked this recipe straightaway after reading it! Another friend, Ika from Bangkok has also tried it.

This recipe belongs to a new found cyberfriend of mine, TUMMY from 3 hungry tummies. Though I discovered their yummylicious blog just recently, glad I did it! Alright, we'll get into the recipe now. On how to prepare the drumlets, check out the steps images by Tummy. I didn't had an assistant to shoot the making.



CRUMBED BOXING CHICKEN by 3hungrytummies

Ingredients :~
makes 12
  • 1/2 kg of chicken drumlets
  • 1/3 cup of panko breadcrumbs*
  • 1/3 cup of coarse sweet potato flour* ( I used normal potato starch)
  • 1 egg ~ beaten
  • sweet chili sauce to serve ( I served with chili sauce and mayonnaise)
  • mix ingredients marked *
for the marinade ~ Mix together
  • 1.5 tbsp of oyster sauce
  • 1 tbsp of light soy
  • 1 tsp of sesame oil
  • 1 tsp of grated ginger
  • 1 tsp of grated garlic
  • dash of Chinese cooking wine ( x add)
  • dash of white pepper
  • a pinch of five spice powder
  • a pinch of salt
Method :~
  1. To prepare the chicken - first remove the excess fat, with a sharp knife cut around the thin end of the drumlet til the skin and sinewy bits are separated from the bone.
  2. Pull the meat down with the help of a knife and you will get a little chicken lollipop. Repeat with the rest of the drumlets.
  3. Marinate the chicken overnight or for at least 2 hours.
  4. Dip chicken in beaten egg then coat it with the panko and flour mixture. Repeat the rest.
  5. Deep fry in batches til golden and crispy.
  6. Serve immediately with some sweet chili sauce.

My kids enjoyed their boxing chicken. Managed to save 3 pcs for a photo shoot as they can't wait to lay their tiny hands on. I couldn't wait too...hahaha! sengihnampakgigi

The chickens disappeared as soon as they're out from the wok! Seriously, I loved it too. Would give 2 thumbs up for Tummy...good job friend! tepuktangan


I fried them more darker and crispier...ooo la la!:woooh:
