Moist Chocolate Cake (new recipe)

Mid-term school holiday is here! It's time for Rishie to relax and play with sister Ashika more. And I can enjoy being home rather than sunny, head-cracking outdoor! We spend most of our time with PS3...phew. Waiting for dear Hubby to return soon!

Both my kids are chocoholics just like their Papa! When Rishie requested for a chocolate cake, I just thought of this recipe which is truly moisty, chocolatey and delicious. I find the sweetness was just right as we had the cake topped with choc ganache and Cadbury chocs. Luckily I had 2 little assistants who readily helped me to arrange the choc pieces. Ashika was really excited helping me out. She just likes to imitate whatever I do in the kitchen. Thus, I had to keep my knives and sharp tools way higher!

Btw, she fell asleep while waiting for me to finish with the photoshoot, but nothing went right when I shot these pics. I completely screwed up with the settings and lighting...haha! 

Enough said, here's the recipe to the sinfully delicious Moist Chocolate Cake.


MOIST CHOCOLATE CAKE

Ingredients :~
  • 100gm all purpose flour
  • 50gm dark cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 180gm salted butter
  • 180gm fine granulated sugar
  • 2 large eggs
  • 1 tsp vanilla essence
  • 200 ml evaporated milk ( I used Ideal )
 Method :~
  1. In a bowl, sift together all purpose flour, cocoa, baking powder and soda.
  2. Using an electric mixer, beat butter and sugar until smooth.
  3. Beat in eggs, one at a time. Add vanilla essence.
  4. Add evaporated milk and flour mixture gradually, continue beating using low speed until done and fully incorporated. Scrape the sides with a cake spatula.
  5. Pour batter in a 20cm lined cake tin, bake for 45 minutes at 170C. (oven temp may vary)
  6. The cake is done when a skewer or toothpick inserted comes out clean. 
  7. Cool on a wire rack. Add chocolate ganache or top with strawberries. 

CHOCOLATE GANACHE 

Ingredients :~
  • 100gm dark cocoa bars ( chopped )
  • 200ml condensed milk
  • 3 tbsp salted butter

Method :~
  1. Using double-boiler method, melt dark cocoa together with condensed milk and butter.
  2. Stir until the mixture thickens.
  3. Cool before spreading on the cake.

    1. Hi Sujatha, place the cake into an airtight container prior to refrigerating. May take out the container and leave to room temperature 15 mins before serving. :)

    1. Hello Anon, you may cool the ganache in room temp or even by refrigerating for 10mins. I'd sometimes just pour it over the cake while it's still warm provided the ganache is thick enough.

    I bake this cake just now and it turn out so good. Almost melt in your mouth. I add some nescafe powder :-) oh I was afraid to use mixer when mixing in flour. But I thin is alright for this recipe, other wise the cake just crumbles

  82. Oh dear me...the cake is in the oven now, this is my first time making cake. I'm supposed to be excited while waiting for my cake outcome, now I’m not. Don’t know whats in my head, instead of using fine sugar, I used coarse sugar (my brain says fine sugar but my hand grabbed coarse sugar) AND I used normal milk instead of evaporated milk. Can you believe it? Gosh I need to go see Neurologist. Lol So disappointed at myself. :D
