Grilled Chicken Briyani & Selamat Hari Raya Aidilfitri ;)
First of all, let me take the opportunity to wish my dearest cyberfriends, (fellow bloggers and readers)... Selamat Hari Raya Aidilfitri....Eid Mubarak ;)
Have a safe and fun celebration!
Now to my Grilled Chicken Briyani recipe. As you know, I don't trouble myself to make technically difficult dishes, lol. Here, I used an electric rice cooker to cook the briyani rice. Just add the grilled chicken to the rice once it's cooked. Done!
I would use the same Briyani Rice recipe and add any style of chicken or mutton dishes. I prefer the chicken and mutton is well cooked before mixing them in the rice.

GRILLED CHICKEN BRIYANI
Ingredients :~
(A) For grilling ; Marinade
- 500gm boneless chicken (preferably thigh or breast part) ~ cut into medium chunks
- 2 tbsp ginger-garlic paste
- 2 tbsp chilli powder
- 6 tbsp plain yoghurt
- 1 tsp garam masala
- 2 tbsp lemon juice
- salt
(B) For the rice ;
- 4 cups Basmathi rice ~ washed and soaked in water for 20 minutes
- 1 cup plain yoghurt
- 4 1/2 cups water (depending on your rice)
- 6 tbsp of ghee
- 1 large piece cinnamon stick
- 3 pcs cardamom
- 2 star anise
- 2 tbsp ginger-garlic paste
- 6 shallots ~ sliced
- 2 green chillies ~ sliced
- 1 tbsp briyani powder ~ I used Baba's brand
- handful of mint leaves ~ chopped
- handful of coriander leaves ~ chopped
- salt
- yellow colouring
Method :~
- Firstly, marinade the ingredients for grilling for about 1 hour or longer.
- Prepare the rice before you grill the chicken pieces.
- Wash soaked Basmathi rice and drain excessive water, keep in rice pot.
- Heat up ghee in a wok. Saute all the spices and ginger-garlic paste until fragrant. Add shallots, green chillies and coriander leaves. Add briyani powder and mix well.
- Add the ingredients to the rice, stir using a wooden spatula. Add yoghurt, water and salt to the rice and mix well again. Be gentle, don't break the rice.
- Now, cook the rice until it's cooked.
- Meanwhile, grill the marinated chicken on a grilling pan without oil or in oven until tender.
- Once the rice is cooked, do not turn off the switch.
- Make some holes using a chopstick, and add yellow coloring. Do not stir immediately!
- Place the grilled chicken pieces over the cooked rice. Close the lid and just keep the rice in warm mode.
- After 30 minutes, gently mix the rice until even. Garnish with chopped coriander leaves before serving.
- Goes well with cucumber raita, chicken curry, dhalca or sambal ;)
Note ;~ You may add Tandoori spice powder to the chicken. And it becomes Grilled Tandoori Chicken Briyani ;)
Thank you for stopping by and Happy Holidays!
