♥...Friday Food Review ~ Eggless Chocolate Cake, 4th recipe!...♥

Hi friends...Happy Friday to All!!!

I baked an Eggless Chocolate Cake again yesterday. Spread chocolate ganache and chilled overnight. Gave some to my son for his break time in school today. I'm aware of his craze for chocolates, that's why I added choc chips in the batter and choc rice over the ganache. Hehe...

Being an addict to eggless choc cakes, I too liked this cake. Truly chocolatey, delicious and spoon licking good! 

I bookmarked the recipe at Veg Bowl quite some time back. The foodie, Ms Mallika has one lovely, yummylicious Vegetarian food blog. She posts variety of dishes, cakes and desserts, made vegan way! Do stop by her blog and drool at her excellent food presentation and photographs...

A good friend of mine, Kak Roz from HomeKreations had also baked this cake and given her verdict.




EGGLESS CHOCOLATE CAKE adapted from Death By Chocolate by VegBowl 

Ingredients :~
  • 125gm plain flour
  • 50gm milk powder ( I skipped this)
  • 60ml warm milk ( I had 180ml)
  • 100gm sugar
  • 80gm cocoa powder
  • 50gm melted butter ( I used salted butter)
  • 1 tsp vanilla essence
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate soda
  • A pinch of salt ( I skipped)
  • 20ml coffee liquor ( I mixed 1 tbsp coffee in 20ml hot water)
  • 50gm choc chips ( my addition )
Method :~
  1. Stir warm milk and coffee together. Add in butter and vanilla essence, whisk well.
  2. In another bowl, mix the flour, baking powder, soda bicarbonate, salt and cocoa powder. Combine well. Fold in the wet mixture and dry ingredients. Mix in the choc chips.
  3. Pour in a greased cake tin and bake for 35 minutes. 

For the chocolate ganache (my addition) ;
500 gm cooking chocolate (finely chopped)
300 gm heavy cream
30 gm butter

Heat heavy cream until it boils. Turn off flame. Add chopped cooking chocolate n stir quickly. Finally add butter and mix well. Leave it to cool at room temperature before use.

♥...Bread & Butter Pudding...♥

A simple and yummy dessert...
BREAD & BUTTER PUDDING by love2cook
(makes 3 ramekins, may also use appropriate pie dish)
Ingredients :~
  • 6 bread slices
  • butter
  • raisins
  • cinnamon powder
  • 225ml fresh milk
  • 2 tbsps thickened cream ( I used Paul's)
  • 1 egg
  • 4 tbsps sugar
  • 1 tsp vanilla essence
  • icing sugar
Method :~
  1. Grease 3 ramekins with butter. Then, spread butter on one side of each bread slices. Cut them into triangles. ( U may leave them squared)
  2. Place bread pieces ( 2 triangles first) in the ramekin. Press a little. Sprinkle some raisins and cinnamon powder.
  3. Now make 2nd layer with 2 more triangles. Press a little and sprinkle some raisins and cinnamon powder. Do the same with the other ramekins. Leave them aside.
  1. In another bowl, beat egg with sugar and vanilla essence. Keep aside.
  2. In a saucepan, heat milk with cream (do not boil). Turn off heat.
  3. Combine milk into egg mixture, stirring continuously until sugar dissolves.
  4. Pour the mixture into the prepared ramekins. Leave them to rest for 20 minutes. 
  5. Bake at 170C for 25-30 minutes. (*Oven settings may vary)
  6. Leave to cool, dust with icing sugar and enjoy!

♥...Poori / Puri (Indian Fried Flatbread)...♥

Helloooooo...good day friends!

Arrgh, been quite some time since my last post na. Sorry, I was a little busy with life and also my flu. Now okey! Hehe...

Today I shall be sharing Poori (Fried Indian Flatbread) by my Mom. I love poori but never tried making them on my own. Liked the ones my Mom does only. So I requested her to make some for me during her visit last weekend.

My work is just to prepare all the stuffs she needed, photo shoot and enjoy those pooris! Very helping na...

Mom said there are few more ingredients can be used to make pooris. This is the simplest way she does. Told her to come over again to do the other recipes...hehe!

POORI by love2cook's Mom

Ingredients :~
  • 500gm wheat flour
  • 1/4 tsp salt
  • 1 tsp sugar
  • 1 tbsp margerine
  • hot boiled water to make dough
  • oil for frying
Method :~
  1. In a large bowl, mix flour with salt, sugar and margerine until it resembles breadcrumbs.
  2. Make a well and slowly add the boiled water. Use a wooden spoon to mix and form a dough.
  3. Cover with a damp cloth and leave the dough to set for 30 minutes.
  4. Make smaller balls from the dough by hand.
  5. Spread some flour on the rolling board. Roll each ball into circles with 4mm thickness.
  6. Heat oil in wok. Deep fry the flattened dough. Press gently with a slotted spoon to puff up the poori. Fry till golden brown and turn over. Once cooked, drain on paper towels. Continue with the other rolled balls.
Done...enjoy with some Potato curry...yummylicious!!!

♥...Happy Thaipusam 2011 & some pics from Batu Caves, Malaysia...♥

Hi friends, good day to all!!

First of all, lemme thank all of you for your loveliest birthday wishes to my Hubby! Hope every wishes and blessings come true for him and us!!!

Sorry, am not posting any food today...

This year Thaipusam falls on 20th January..ie tomorrow! Thaipusam is a Hindu festival celebrated mostly by the Tamil community on the full moon in the Tamil month of Thai (January/February). Lord Muruga is the main deity of Thaipusam.

Celebrated nationwide in Malaysia, government declared Public Holiday for some states here, and Selangor is one of them!

In Batu Caves, Penang and Ipoh, Thaipusam is celebrated in the grandest manner starting off with chariot processions a day before. Devotees will perform their spiritual offerings to Lord Muruga by carrying kavadis and milk pots after 48 days of fasting and prayers on Thaipusam.

The number of devotees and visitors thronging these famous temples during Thaipusam is unbelievable! Don't be surprised if you get lost...hehe! The crowd is not made up by Malaysians alone, but also tourists. They'll never wanna miss this auspicious day...sweets!

It's been years since we went to Batu Caves for Thaipusam. The crowd is sometimes so unbearable especially if you are with kids. We always go there during normal days. Even at that day, many tourists will be around. The place is just so happening!

Batu Caves has 272 steep steps! We loved the 42.7 metres statue of Lord Muruga (World's Tallest Lord Muruga Statue) and 15 metres high Jai Hanuman statue!

My biggest ever fear in Batu Caves are those macaque monkeys! Goshhhh...I dare not carry any food bags in my hand! There was one time, I was so afraid that I threw my mineral water bottle at a monkey!!! My Hubby had a difficult job chasing the monkey away, it didn't wanna budge at all...hahaha.

♥...Lemon Yoghurt Muffin & Pongal wishes from Love2cook...♥

I've been baking muffins quite often now. Passed few trials with delicious results...a few with little disappointments. But that did not stop me from "muffining"! Hahaha...

Was eager to bake some muffin as per my fellow blogger-friend's recipe, but unfortunately I did not have the main ingredient in stock! Too lazy to shop for it, I changed mind and baked Lemon Yoghurt Muffin instead. I sticked to this recipe after 2 trials and some adjustments to fit our taste buds.

I must say that I have a soft corner for lemons ever since the Lemon Butter Cake happened! I did try some other similar recipes too...

Now back to the muffin. Combination of yoghurt and lemon gives great oomph. I baked them a little longer to get the crusty top! I loved it...

LEMON YOGHURT MUFFIN by love2cook

Ingredients :~
  • 220gm all purpose flour
  • 1 tsp baking powder
  • 3/4 tsp baking soda
  • 160gm sugar
  • a pinch of salt
  • 1 egg
  • 3/4 cup plain yoghurt ( U may use lemon flavoured yoghurt )
  • 1/2 cup melted margerine
  • 1 tbsp grated lemon rind
  • 1 tbsp lemon juice 
 Method :~

  1. Preheat oven at 170C. (Oven temp setting may vary)
  2. In a large bowl combine flour, baking powder, baking soda, sugar and salt. 
  3. In another bowl, beat egg and add yoghurt, melted margerine, lemon rind and juice.
  4. Fold in flour mixture into yoghurt mixture. Mix well and spoon batter into lined muffin tray.
  5. Bake for 20-25 minutes. Cool on wire rack.
U want more lemony...squeeze some lemon juice over your muffins!!!



 

 Couldn't find any lemon muffin cups...strawberry can can lah!!! Hihihihi...
